For still wine the bottle is not opened, it is ‘accessed.’ Sparkling wine is opened then resealed with the Sparkling solution.
For the original system, a teflon coated hollow needle is inserted into the bottle. Argon is flushed into the bottle and the increase in pressure forces out the equivalent volume of wine.
No Oxygen (when used correctly) comes into contact with the wine. The bottle can be then accessed again or opened at another time with no deterioration of the wine in the meantime.
Always flush the needle with Argon before inserting through the cork into the bottle.
An ideal solution for turning a 750ml bottle into a half bottle. Pour out 375ml with Coravin. Then when ready to serve the second 375ml, days, weeks or months later, open the bottle.
